Peanut Butter Smartie Cookies
Ingredients:
1/2 cup Shortening
1 cup Creamy or Chunky Peanut Butter ( I use chunky)
3/4 cup granulated sugar
1/2 cup firmly packed brown sugar
1 tbsp milk
1 tsp vanilla
1 egg
1 1/4 cup all purpose flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 cup smarites
Method:
Preheat oven to 375 degrees.
Combine shortening, peanut butter, and sugars in to a large bowl and cream until light and fluffy. Add in milk, egg, vanilla, and beat at medium speed until well blended.
In a separate bowl, combine flour, baking soda, baking powder and salt and mix well. Add smarties. Then combine with wet mixture.
Drop by rounded teaspoonfuls on ungreased cookie sheets, or lined with parchment paper 2 inches apart. Flatten using a fork and criss-crossing them (flour the fork, otherwise it will stick).
Bake 8 – 10 minutes in preheated oven.
Cool 2 minutes, then remove onto rack to cool completely
Makes 2-3 dozen depending on the size you make them.
ENJOY!
